Menu Monday.

New week, three new recipes. Two great, one that didn't meet expectations. Sometimes I hate when I try a new recipe and it's lacking, other times I'm thankful I was at least willing to be adventurous. Adventures in food... such an exciting, rebellious life I lead. ;)



Pesto, Plum and Fontina Panini with Annie's mac & cheese and salad
Grade: C
Comments: Eh. The pesto was great. The fontina was great. But the plums? Weird. Mr. Smith had roasted chicken lunch meat on his instead of the plum and actually really liked it. Me... well... I ate it. That's good, right?



Creamy Stovetop Mac & Cheese (with Grilled Bone-in Chicken Breast for the Mr.)
Grade: A
Comments: This was really good. I don't know that I'd call it "creamy." It was actually kind of pully-stringy-cheesy but absolute goodness. The gouda was a change and I loved it. Mr. Smith annihilated it. So good. Try this, but not when you're on a diet. :)




Shrimp Enchiladas Verde with Saffron Rice and Awesome Black Beans
Grade: A+
Comments: So, so good. Mr. Smith rarely gets excited for leftovers, but he actually asked me not to cook the next night so he could eat this again. No complaints here!
