Menu Monday.

I didn't cook much this week. We had leftovers three times, pizza once after a long workday and picked up Mexican for Mr. Smith's last meal before his wisdom teeth were removed. So the soft foods below were cooked with love by me for him to eat while he was recovering. :)



Baked Potato Soup
Grade: A
Comments: Loved it! We used skim milk, but I added a little extra cheese. Mr. Smith really liked the soup, especially as a first "real food" meal post-surgery. I've had the recipe pinned for a little while, so it was the perfect time to make it. The weather was just right for a good, solid soup. And he wants a repeat... there is no better endorsement!

Comments: This is hardly homemade, but I thought I'd share with you anyway. I'm a picky, picky girl when it comes to tomato soup, and this one really is a fantastic from-the-box soup. If you ever find yourself in a pinch, Trader Joe's to the rescue. Of course...
